Quick-pickled Radishes

 

A recipe for quick pickled radishes in case, like me, you enjoy growing radishes but don’t necessarily love eating them. This recipe MIGHT pique your palate AND change your mind!

Ingredients

1 bunch of radishes

2 carrots

handful of cilantro

1 hot pepper

1/2 cup apple cider vinegar

1 1/2 tsp salt

1 tbsp sugar (optional)

1 cup warm water

Directions

Slice the radishes and carrots as thinly as possible. Dice the cilantro. Transfer the veggies and herbs to a clean, pint size glass gar. In a measuring cup, make the pickling mixture by combining apple cider vinegar, salt, sugar, and warm water. Stir to dissolve the sugar and salt. Pour the pickling mixture over the veggies and herbs and let them meld together for an hour. Finally, cover the jar with an airtight lid and store it in the refrigerator for up to three weeks.
