Beet Hummus

And just like that - one little beet from the garden turned something as ordinary as hummus into an extraordinary culinary surprise! It tastes like hummus, smells like hummus, but looks like something you’d order from a fancy schmancy restaurant. Lest you be intimidated by the color, let me assure you it’s one of the easiest recipes to make. After roasting the beet, just combine the ingredients in a food processor, blitz for 5 minutes, and garnish with your favorite toppings.

Ingredients

1 1/2 cups roasted beet, peeled and chopped

1 can chickpeas, drained

2/3 cup tahini

1/3 cup of lemon juice

1 clove garlic, chopped

1/3 cup olive oil

1 teaspoon cumin

1 teaspoon kosher salt

toppings (optional): salt, pepper, lemon zest, sesame seeds, cilantro, cumin

Directions 

Combine the beets, chickpeas, tahini, lemon juice, garlic, cumin, and salt in the bowl of a food processor. With the motor running, slowly drizzle in the olive oil and blend until smooth. Add chickpea liquid, water, or lemon juice as needed to produce a smooth puree. Taste and adjust seasoning, adding more olive oil, salt, pepper, or lemon juice, as needed. Serve garnished with lemon zest, herbs, salt, pepper, and olive oil.
