Lavender Mint Tea
I drink mint tea almost every day of the year, but occasionally I’ll mix things up a bit and add other herbs to the kettle. Here’s a favorite late summer blend, using lavender and rosemary.
Ingredients
1/4 cup fresh mint leaves
2 teaspoons dried lavender flowers
1/2 teaspoon fresh rosemary
4 cups boiling water
honey, to taste
Directions
1. Roll the mint leaves between the palms of your hands until they’re slightly crushed (this helps the leaves release mint oil, which gives the tea more flavor). Drop the leaves into a small pot.
2. Add the lavender and rosemary to the pot, cover them with boiling water, and let them steep for 5 minutes. Strain the tea, discard the herbs, and add honey to taste. Serve immediately.
