No-waste Sourdough Discard Crackers

Not sure why I’ve never shared this recipe for no-waste sourdough discard crackers - it’s one of my favorites, so much so that I often look forward to the crackers more then the bread. Have you tried them? They taste like the little parmesan cheese crackers you see at holiday parties - absolutely delicious! If you need a sourdough starter and/or bread recipe, I like to use the ones by Elaine Foodbod (click here). Enjoy!

Ingredients

¾ cup discarded sourdough starter

2 tablespoons melted butter (dairy or vegan)

¼ teaspoon sea salt (plus more to sprinkle on top)

2 teaspoons dried garlic and herbs (make your own or the brand Simply Organic makes a yummy blend)

Directions

Preheat oven to 325°F and line a rimmed baking sheet with parchment paper. In a medium size bowl, combine the ingredients and mix well. Pour the mixture onto the parchment paper and spread it evenly in a thin layer. Sprinkle the top with salt. Bake for 10 minutes, then remove the baking sheet form the oven and score the crackers. Bake for an additional 25-35 minutes or until the crackers are golden. Let the crackers cool , then break them into squares and store them in an airtight container for up to a week.
