Gluten-free Green Tea Waffles

 

On rare, but special occasions, I like to add a little green tea to my morning waffles. I don’t serve them to the kids since they contain caffeine; instead I make a few plain waffles for them before adding green tea powder to the batter.

If you have a favorite waffle recipe, you can make these festive spring waffles by adding a couple teaspoons of matcha powder to it; otherwise (and especially if you need a gluten-free recipe, you can try mine.

P.S. These are really fun to serve on St. Patrick’s Day or to celebrate the first day of spring. We like to eat them al fresco, on the front porch, with all of our favorite toppings (yogurt, berries, honey, etc., ) and a warm cup of tea.

Ingredients

1 ½ cups GF oat flour

2 teaspoons baking powder

½ teaspoon salt

2 tsp matcha powder

¾ cup room temperature milk/mylk

5 tablespoon melted coconut oil

2 large eggs

2 tablespoons maple syrup

1 teaspoon vanilla extract


Directions

  1. In a mixing bowl, whisk together oat flour, baking powder, salt, and matcha powder. In another bowl, whisk together the milk, melted coconut oil, eggs, maple syrup and vanilla extract.

  2. Pour the wet ingredients into the dry ingredients and mix until well combined.

  3. Preheat the waffle iron and set to medium-high (if possible).

  4. Grease the warmed waffle iron with coconut oil. Pour 1/4 cup of batter for each waffle onto the heated waffle iron, and cook for 3 to 4 minutes, or until the waffle is cooked through.

  5. Transfer the cooked waffle to a cooling rack or keep warm by placing it in an oven on 200 degrees F until ready to serve.

  6. Serve warm with maple syrup and any other topics you like (fruit, yogurt, nut butter, etc.,)
